Papaya Payasam

INGREDIENTS:

Milk- 1 1/2 litre
Grated papaya(semi-ripe)- 2 cups
Sugar- 2 cups
Sago pearls- 1 cup
Ghee-2 tbsp
vanilla essence-1 tsp
salt - a pinch

METHOD:
Soak sago pearls in warm water.In a pan heat ghee and saute the grated papaya. Add 3tbsp sugar in it and cook it well. Allow it to cool. Take another pan and cook the sago pearls with milk and remaining sugar. Add salt and vanilla essence to it and allow it to cool. After it cools down add the cooked papaya and mix it well.Papaya payasam is ready to serve.

Tender Coconut Shake (Elaneer Sshake/Karikku Shake)


 Ingredients:
 Tender coconut flesh – 1 cup
 Tender coconut water-1/2 cup
 Chilled milk-1 cup
 Milk powder-2tsp
 Powdered sugar-3-4 tbsp.
 Vanilla essence-1/2 tsp.

PREPARATION

Blend all the ingredients together and serve it chilled. Enjoy. 

Jackfruit cake

INGREDIENTS
2 cups all-purpose flour
3/4 cup granulated sugar
1 cup butter
4 eggs
Vanilla essence (optional)
1 tsp. baking powder
1/2 tsp. baking soda
Cashew nuts (optional)
For jackfruit paste:
Jack fruit (grounded)- 2 1/2 cups
Jaggery syrup -1 cup
Cardamom powder-1/4 tsp
       
METHOD:
In a deep bottom pan add grounded jack fruit. Stir it well for 3 minutes. Then add the jaggery syrup and stir well until it becomes thick consistency. Allow it to cool.

PREPARATION 
1.     Sift together flour, baking powder and baking soda and keep it aside.
2.     Whisk butter and fine sugar till smooth. Then add eggs one by one. Beating well after each addition.
3.     Add flour mixture little by little.  Then add cooked jackfruit paste and vanilla essence. Combine it well.
4.     Preheat oven at 180 OC and then bake it for 35 min.
5.     Remove from oven and cool to room temperature

Palak Paneer












     Cooking Time: 15 Minutes                                                                        

    Vegetarian                                       Servings: 4 people

Ingredients
  •   Spinach – 1 bunch.
  •   Paneer cubes-3/4 cup
  •   Green chilli-1
  •   Oil-2tbsp
  •   Butter-1tbsp
  •   Onion chopped-1 cup
  •   Cumin seed-1/2 tsp.
  •   Ginger garlic paste-1 tsp.
  •   Lemon juice-1 tsp.
  •   Fresh cream-2 tbsp.
  •   Kasuri methi-1/2 tsp.
  •   Salt to taste
Preparations

Wash and clean the spinach in water and blanch it for two minutes. Drain and transfer the spinach in cold water for 2-3 minutes. Drain it again. In a mixer add green chili and blanched spinach to make a smooth puree. Heat oil in a pan, add paneer cubes and shallow fry until light brown in colour. Remove and keep it aside. Add oil and saute the onion in the same pan until it turns light brown in colour. Add cumin seed and sauté it again for 1 minute and add ginger-garlic paste. Saute it well. Add spinach puree and cook it for about 2-3 minutes. Add water, lemon juice, salt and butter. Stir well. Add the fried paneer and let it cook for 1 minute,. Switch off the flame and add cream and kasuri methi. Palak paneer is ready to serve. 

Cake


INGREDIENTS
2 cups all-purpose flour
1 cup granulated sugar
1 cup butter
3 eggs
Vanilla essence (optional)
1 tsp. baking powder
2 tbsp. fine sugar for dusting

PREPARATION

1. Sift together flour, baking powder and keep it aside.
2. Whisk butter, fined sugar till smooth. Then add eggs          beating well after each addition.
3. Add flour mixture little by little.  Then add vanilla              essence and combine.
4. Spoon the batter into the prepared moulds, dividing          evenly.
5. Preheat oven at 180 OC and then bake it for 15 min.
6. Remove from oven and cool to room temperature

7. Dusting fine sugar on top of the cake.
