German Black Forest Cake

Preparation time:         1hr                                                                     Dessert Cook time: 1 hr For the Butter cake Ingredients: 2 cups all-purpose flour 1 cup granulated sugar 1 cup butter 3 eggs Vanilla essence (optional) 1 ½ tsp. baking powder PREPARATION 1.   Sift together flour, baking powder and keep it aside. 2.   Whisk butter, fined sugar till smooth. Then add eggs beating well after each addition. 3.    Add flour mixture little by little.  Then add vanilla essence and combine. 4.   Preheat oven at 120 degree c and then bake it for 30 min. 5.   Remove from oven and cool to room temperature For the Chocolate Cake:   Ingredients 2 cups all-purpose flour 1 cup granulated sugar 1 cup vegetable oil 3 eggs 1tsp baking powder 2 tbsp. dark cocoa powder ½ cup milk 2 tsp. Preparation time:         2hrs                                                                   TYPE: non Cook time: 15 min INGREDIENTS: All-purpose flour-2 ½ cups Butter-200 g Water Salt to taste Egg yolk-1(beaten) For the filling: Chicken minced-1 cup Onion chopped-1/2 cup Coriander powder-1/2 tsp Red chilly powder-1/2 tsp Pepper powder-1/2 tsp Turmeric powder-1/4 tsp Lime juice-1/2 tsp Garam masala-1/4 tsp Coriander leaves chopped-1tbsp Salt to taste Preparation: Heat oil in a pan add onion, minced chicken and all the above masalas. Sauté well. When chicken is cooked add garammasala, lime juice and coriander leaves. Remove from fire and allow to cool. Meanwhile in a bowl mix flour, salt and water to make smooth dough and refrigerate until firm (about 20 minutes). On a lightly floured surface, roll out the dough (rectangular) 1/2 inch thick. Place the chilled butter in the center and fold the two ends over it. Fold into thirds.

Idichakka thoran(Tender jack fruit stir fry)

Preparation time:   30 min                                                                 TYPE: veg Cook time:  15 min Ingredients: Tender jack fruit (idichakka)- 1(small) Coconut oil-3tbsp Mustard-1/4 tsp. Parboiled rice-1tsp Split black gram-1/4 tsp Dry red chillies-2nos Turmeric powder-1/4tsp Chilly powder-1/2tsp Chopped onion-1/2 cup Grated coconut-1 cup Curry leaves-1 string Green chillies- 2(slit) Salt to taste Preparation: Cut the jack fruit into small chunks. Chop off the thorny skin and stem. Cook these chunks in 2 cups of water, turmeric powder in a pressure cooker for 1-2 whistles. Remove from fire and drain the water. Shred the cooked jack fruit by using a mixer. In a bowl add shredded jack fruit, turmeric powder, green chillies,salt and red chilly powder. Mix well. Heat oil in a pan add mustard and when it splutters add rice, split black gram, dry chillies, chopped onion, curry leaves and sauté for 2 minutes. Add the jack fr

Preparation time: approx.. 8 min                                            Non veg Cook time: 5 min                     Ingredients: 1 tbs. olive oil 4 eggs 2 medium sliced capsicum(red and green) 1 medium sliced onion 1 small tomato sliced 1 tsp. vinegar ½ tsp. white pepper Salt to taste Preparation: 1.      Heat a pan. Add olive oil then sauté onion, capsicum and tomato. Mix well. 2.      Add salt, white pepper and vinegar and sauté well. 3.      Make 4 indentations in the mixture and crack eggs gently into each indentation in the mixture. 4.      Cover and cook for 3 minutes. 5.      Then drag a spatula gently through the egg whites along with the sautéd mixture, being careful not to disturb the yolks. 6.      Serve hot. You may serve it with toasted bread.

Gâteau Fraisier(Strawberry cake) Preparation time:         1 hr                                 TYPE:  non veg Cook time: 1hr INGREDIENTS: Sponge cake cut into two layers(1 ½  cm thick) gelatin 400 ml milk  vanilla Essence 50 g caster sugar 50 g corn flour 2 whole eggs 100 g butter, cut into cubes 400 ml whipped cream  500 g medium to large strawberries 30 g caster sugar boiled with 30 ml of water for 2 minutes to make a sugar syrup A little icing sugar for dusting 250 g fondant To garnish the cake: 100 ml whipped cream A few strawberries Preparation:     Place the gelatin in a bowl of cold water to soften. Place the milk in a pan with the vanilla essence and bring almost to the boil. In a bowl, mix together 50 g caster sugar, 50 g corn flour and the eggs. Malabar Fish Curry(Fish Aanam) Preparation time:         15 minutes                               TYPE: NON VEG Cook time: 10 min INGREDIENTS: 250gm. king fish 5tbsp. coconut oil ¼ tsp.fenugreek powder 2 strings curry leaves 5 shallots chopped 1 large onion chopped 1tsp. ginger garlic paste 2 green chillies (slit) 1 tomato chopped 11tbsp. kashmiri chilli powder 1 tbsp. coriander powder ¼ tsp. turmeric powder 2 tbs. tamarind pulp For the paste: 1 cup grated coconut 2 shallots chopped 1 string curry leaves ½ tsp. fennel seed powder 1 tsp. coconut oil Roast the above ingredients, grind well. Add sufficient water, and grind to a smooth paste. Preparation: Heat oil in a mud pot, fry the chopped shallots, curry leaves, chopped onion and sauté till the onion turns light brown in colour.
