Chicken Barbeque (INDIAN Version)

CHICKEN BARBEQUE For the Chicken Barbeque: 1 kg Chicken (Thigh) 1 tbsp Lemon juice 1 tbsp Ginger-garlic paste 1 tsp Kashmiri Chili Powder 1 cup plain yogurt 1 tsp Garam Masala For vegetable barbeque: 2 onions I capsicum 2 tomatoes Some garlic pods Frozen fries (250 gm) 1 lemon Preparation: 1.       Make slits crosswise on the chicken thigh to help absorb more flavor. 2.       Marinate the chicken pieces with the above ingredients. 3.       Cover and refrigerate at least 8 hrs or overnight. 4.       Prepare the BBQ tray lightly oil the hot grill grate. 5.       Take the chicken from the marinade. Grill the chicken over hot BBQ grill. Turn frequently to prevent burning. 6.       Poke the chicken with a skewer. If the chicken is cooked the skewer will move easily inside the meat. Stuffed Mussels (Kalumakai)

STUFFED MUSSELS INGREDIENTS Mussels – 10 in numbers For stuffing: Rice flour – 1 ½ cups Coconut grated - ½ cup Fennel seeds -1tsp Small onions (shallots) – 10 in numbers Salt to taste For the paste: chili powder - 1tbsp Turmeric powder - ¼ tsp Fennel Seeds- ½ tsp Salt to taste Oil for frying METHOD: For the stuffing: 1.      Wash the mussel shells well. Open the shells with a knife drain all the water.  2.      Clean the inside part to remove any dirt there. Take special attention so that no sand gets stuck inside. Open only after cleaning the outside shell very well 3.      Grind the ingredients for the dough, except the rice flour, to a smooth paste with no water. 4.      Mix the rice flour with hot water .mix it really well that dough become very soft. Butter Cookies Preparation time:         15 minutes + chilling time               Cook time: 8 minutes INGREDIENTS:        1 cup butter 1 cup sugar 1 egg 2 cups all purpose flour salt to taste 1 tsp. vanilla essence PREPARATION 1.      In a large bowl cream together butter, sugar until light and fluffy. 2.      Beat egg then stir well .Combine flour and salt. 3.      Stir into the sugar mixture .Cover the dough and chill for at least one hour. 4.      Preheat oven to 180 degree. Press the dough out on the greased sheet. 5.      Bake for 8-10 minutes until lightly golden at the edges . 6.      Remove from oven. Allow to cool. Butter cookies are ready.

Choco web cake Preparation time: 10 minutes Cook time: 20 minutes Ingredients 2 cups all-purpose flour 1 cup granulated sugar 1 cup vegetable oil 3 eggs 1tsp baking powder 2 tbsp. dark cocoa powder ½ cup milk 2 tsp. Vinegar / Lime juice 1 tsp. vanilla essence For sugar syrup ½ cup water 2 tbsp. sugar 1 tbsp. brandy 1cup meringue icing 1 ½ cup Choco ganache icing (spreadable consistency) PREPARATION 1.       Sift together flour, cocoa powder, baking powder and keep it aside. 2.       Whisk oil, fined sugar till smooth. Then add eggs beating well after each addition. 3.       Add flour mixture little by little. Add vinegar and mix well. Lemon yogurt cake Baking time:  35 min                                                            Dessert  Preparation time:  20 min INGREDIENTS: Cake: ¾ cup vegetable oil 2 eggs 1tbsp. finely grated lemon rind 2 tbsp. lemon juice 1 cup thick natural yogurt 1 ¾ cup caster sugar 2 cups self-rising flour Lemon frosting: ¾ cup granulated sugar ¼ cup lemon juice PREPARATION 1.       Preheat oven to 140 O C. 2.       Take a bowl and then add oil, eggs, rind, lemon juice, yogurt and sugar. Whisk well. 3.       Then add flour and mix well until the batter is smooth. 4.       Pour the mixture into the tray and bake for 35 min. 5.       While the cake is still hot remove from the tin and place on a plate. 6.       To make the lemon frosting, gently stir together the sugar and lemon juice. 7.       Spoon over the cake and allow it to set. Serve warm.

Methi(Fenugreek) Chicken Preparation time: 10 min Cook time:  20 min      NON VEGETARIAN Cuisine : Indian INGREDIENTS: Chicken 500g 100 ml oil 1medium size sliced onion 1 medium size tomato chopped ½tsp black cumin seed ½ tsp. turmeric powder 2tsp ginger garlic paste 1tsp cumin powder 1 ½ tsp. coriander powder 1 ½ tsp. red chilli powder 2tbsp yoghurt 1cup water 2cups Fresh methi (fenugreek) leaves 1tsp garam masala Salt PREPARATION 1.       In a wide bottomed vessel, heat oil on low heat. Then add black cumin seeds and fry for a few seconds. Then add the sliced onions. Sauté well till the onions turns golden brown. 2.       Add ginger garlic paste. Sauté well till the raw smell disappears. Add chicken, turmeric powder, cumin powder, red chilli powder, chopped tomatoes and salt. Mix well.
