Sfogliatelle Preparation time:         1 hr                                 TYPE: veg Cook time: 20 min INGREDIENTS: 250g- plain flour 25g sugar 100ml water Salt Ingredients to fill: 1 cup coconut 3tbsp sugar 2tbs chopped nuts 1tbsp cinnamon powder Mix the above ingredients and place in m.w oven for 1 minute. Remove from oven and then mix with cinnamon powder. Filling is ready. PREPARATION To make the pastry, put the flour, sugar and salt in a bowl and gradually mix in the water knead for few minutes and make dough. Cover with plastic wrap and leave to rest for about 30 minutes. Divide the dough into a few pieces (each about the size of a slice of bread) so it is easier to work with. Potato Fry Preparation time:    3 mjn                                        TYPE: veg Cook time: 5 min INGREDIENTS: Potato- 1big size (unpeeled)slice into thin round slices Turmeric powder-1/4 tsp Chilly powder-1/2 tsp Chicken masala powder -1/2 tsp Amchur powder or lime juice-1/2 tsp Water- 1 tbsp . Olive oil -3 tbsp. Oregano or thyme or saunf(optional)-1/4 tsp Salt to taste PREPARATION Cook the sliced potatoes with salt and water. Drain water, marinate with turmeric powder, red chilly powder, chicken masala powder,  1 tbsp  water, salt, amchur powder, oregano for 5 minutes. Heat oil in a pan and shallow fry the potato slices. Potato fry is ready to serve.

Drumstick Leaves Stir Fry Preparation time:         15 minutes                               TYPE : Veg Cook time: 7 minutes INGREDIENTS: 4 cups drumstick leaves (wash and then chopped) 1 cup coconut grated ¼ tsp. cumin seeds 1tsp. red chilly powder ¼ tsp. turmeric powder 4 nos shallots chopped ¼ tsp. mustard 1 string curry leaves 2 tbsp coconut oil or veg oil Salt to taste ½ tsp. lime juice (optional) PREPARATION Heat oil in a pan and add mustard. When it crackles add cumin seeds, curry leaves, chopped shallots, turmeric powder and sautĂ© well. Then add chopped drumstick leaves, red chilly powder, grated coconut, and salt. Cook on a low flame. When it’s completely cooked, add lime juice and mix well. Drumstick leaves stir fry is ready to serve.

Fish Pickle (Mackerel)

Fish Pickle (Mackerel) Preparation time:30 minutes Cook time:  1/2 hour      TYPE non-veg INGREDIENTS: 2 Kg Mackerel (cleaned and cut into small pieces) Sesame oil for deep frying 2 tsp mustard 1tsp. turmeric powder 4 nos Chopped green chillies.  ½ tsp fenugreek powder 2 lemon sized tamarind 1 ½ cups vinegar 6 tbsp. ginger garlic paste 4 tbsp Kashmiri chilly powder 2 tsp. granulated sugar 4 strings curry leaves(2 strings chopped) Salt to taste   PREPARATION 1.        1.       Soak tamarind in vinegar for ½ an hour. Extract pulp. Marinate the fish with turmeric powder, salt for 20 minutes. Heat oil in a deep bottom pan and fry the fish. Remove from oil once semi- crispy. In the leftover oil splutter the mustard then add green chillies, curry leaves, ginger garlic paste, sugar and sautĂ© for 4 minutes. Then add tamarind pulp and salt. Tuna Stir Fry Preparation time:         1hour                                      TYPE non veg Cook time: TIME INGREDIENTS: Tuna meat-1kg Turmeric powder-1tsp. Salt-1tbsp. Water Coconut oil - 4tbsp. Mustard-1tsp. Curry leaves-1 string chopped Onion chopped-1big Ginger chopped -1tbs. Green chilly -2 nos Black pepper powder-2 tsp. Lemon juice-2tbsp. Grated coconut-1 cup Salt to taste PREPARATION Place tuna meat in a deep vessel and fill water so that the meat sinks well. Add salt, turmeric powder and boil till the meat is cooked well. Drain the water and let the meat cool. Remove the skin, thorns and the black portion of the meat. If the black portion not removed it will spoil the taste of the white meat. Snow White chicken   Preparation time::        15 MINUTES                       NON VEGETARIAN Cook time: 20 MINUTES INGREDIENTS: Chicken-500g White onion chopped -2cups Ginger garlic paste-1tsp White pepper powder-1tbsp Cashew nut-50gms Star anise-A few Desiccated coconut -2tbsp Lime juice-1tbsp Salt to taste. Left part will have two parallel bones and the other part will have a single bone. Remove the thin bone from one part of each wing. You will get two lollipops from each wing. Now cut the ligaments from each lollipop. Detach the ligament from one side of a bone, pull the flesh to one end of a bone and form a lollipop shape. French Fries Preparation time:20  mts                                                         TYPE veg Cook time: 10 mts INGREDIENTS: 1 big size Potato Salt to taste Oil for deep frying PREPARATION 1.     Peel the potatoes. Cut them into one cm thick slices and cut into finger sized pieces. Keep sufficient water for boiling in a large pan. Put the potato pieces in the water, add salt and boil till half done. Drain and cool the potatoes in the refrigerator. Transfer the potato pieces into a zip-lock bag and seal after removing any excess air. Keep them in freezer for 15 min. Then deep fry directly in medium hot oil till golden and crisp. Drain and place on absorbent paper. Add salt only after removing them from hot oil. Serve hot.
