Dalgona Coffee

Ingredients Instant coffee Milk Sugar Water Method In a bowl take the instant coffee, sugar and hot water into a bowl in 1:1:1 ratio depending on the number of servings. Whisk until it gets thick, creamy and lighter in colour. Add ice in a glass and pour the milk about ¾ its volume. Top it with the creamy coffee mixture. Your Dalgona Coffee is ready to be served.

Bread Pudding

Ingredients 6 slices of Bread 4 tbsp. of sugar for caramelizing ½ a cup of sugar ½ a cup milk ½ tsp. vanilla essence 4 tbsp. custard powder Method: In a pan add the sugar for caramelizing and pour it into your pudding mould. Spread it evenly. Remove the edges of the bread. Cut the bread into small pieces and grind it well. Mix the custard into half the amount of your milk and mix it. Keep it aside. In a boil the rest of the milk and add sugar. Mix and cook it in low flame. Add the bread crumbs and vanilla essence. Make it of semi-thick consistency. Pour the mixture into the mould and cover it with aluminium foil. Pour hot water into another pan and place a stand in it. Keep the mould over the stand and cover it. Steam it for 20-30 minutes. Cool it at room temperature and refrigerate for about 2 hours. Invert it into a plate. Bread pudding is now ready to be served.

Papaya Payasam

INGREDIENTS: Milk- 1 1/2 litre Grated papaya(semi-ripe)- 2 cups Sugar- 2 cups Sago pearls- 1 cup Ghee-2 tbsp vanilla essence-1 tsp salt - a pinch METHOD: Soak sago pearls in warm water.In a pan heat ghee and saute the grated papaya. Add 3tbsp sugar in it and cook it well. Allow it to cool. Take another pan and cook the sago pearls with milk and remaining sugar. Add salt and vanilla essence to it and allow it to cool. After it cools down add the cooked papaya and mix it well.Papaya payasam is ready to serve.

Tender Coconut Shake (Elaneer Sshake/Karikku Shake)

 Ingredients:  Tender coconut flesh – 1 cup  Tender coconut water-1/2 cup  Chilled milk-1 cup  Milk powder-2tsp  Powdered sugar-3-4 tbsp.  Vanilla essence-1/2 tsp. PREPARATION Blend all the ingredients together and serve it chilled. Enjoy.

INGREDIENTS 2 cups all-purpose flour 3/4 cup granulated sugar 1 cup butter 4 eggs Vanilla essence (optional) 1 tsp. baking powder 1/2 tsp. baking soda Cashew nuts (optional) For jackfruit paste: Jack fruit (grounded)- 2 1/2 cups Jaggery syrup -1 cup Cardamom powder-1/4 tsp          METHOD: In a deep bottom pan add grounded jack fruit. Stir it well for 3 minutes. Then add the jaggery syrup and stir well until it becomes thick consistency. Allow it to cool.
