Mutton Stew
Mutton Stew is a very easy recipe. It is a perfect accompaniment with many dishes. Here's the recipe.
INGREDIENTS:
1 kg mutton
2 diced
potatoes
2 medium
onion sliced
1 coconut
(scraped)
1 chopped tomato
4 green
chillies
1 tsp White
pepper
A small
piece of ginger
Salt to
taste
For
seasoning: onion (sliced), some curry leaves and 2 tbsp of ghee.
PREPARATION
1.
Squeeze
the first-extract coconut milk from the scraped coconut. Keep the squeezed-coconuts
aside. Add water in it and squeeze it to get second-extract coconut milk.
2.
Half
cook the mutton. Then add potatoes, green chillies, ginger, sliced onions and
diced tomatoes along with the mutton and the second-extract coconut milk. Cook them in medium flame until they are
perfectly cooked.
3.
Remove
the lid and add 1st extracted milk, white pepper and salt to taste.
4.
Take
a wok or Kadai and add ghee. Sauté the sliced onion till the onions turns
golden brown. Then add the curry leaves.
5.
Add
them into the mutton stew for seasoning.
