Lemon Yogurt Cake

Lemon yogurt cake

Preparation time:  20 min


INGREDIENTS:
Cake:
¾ cup vegetable oil
2 eggs
1tbsp. finely grated lemon rind
2 tbsp. lemon juice
1 cup thick natural yogurt
1 ¾ cup caster sugar
2 cups self-rising flour

Lemon frosting:
¾ cup granulated sugar
¼ cup lemon juice


PREPARATION
1.      Preheat oven to 140O C.
2.      Take a bowl and then add oil, eggs, rind, lemon juice, yogurt and sugar. Whisk well.
3.      Then add flour and mix well until the batter is smooth.
4.      Pour the mixture into the tray and bake for 35 min.
5.      While the cake is still hot remove from the tin and place on a plate.
6.      To make the lemon frosting, gently stir together the sugar and lemon juice.
7.      Spoon over the cake and allow it to set. Serve warm.
