Chicken muringa ila stir fry(Chicken drumstick leaves stir fry)

INGREDIENTS:
Chicken-400 g
Drumstick
leaves chopped-1/2 cup
Coconut
oil- 4 tbsp
Onion
chopped -1 cup
Ginger
chopped-1 tsp
Garlic-
3(small)
Kashmiri Red chilly powder-3 tbsp
Coriander
powder -2 tsp
Turmeric
powder- ½ tsp
Garam
masala- 1 tsp
Lime
juice – 1 tsp
Green
chillies(slit)- 3 nos
Coconut
grated-1/2 cup
Water-1/2
cup
Salt
to taste
PREPARATION: Marinate the chicken with turmeric powder (1/4
tsp) and salt.
Crush
the grated coconut with 1 tbsp chilly powder and garlic and keep it a side.
Heat
oil in a pan add chopped onion till its color changes into light brown, then
add chilly powder(2 tbsp),turmeric powder, coriander powder, garam masala
powder . Saute well. Add water and marinated chicken pieces, cover and cook
till the chicken is fully cooked. Then
add chopped drum stick leaves, saute it for 3 minutes, then add crushed coconut
mixture. Mix well, add lime juice. Drumstick leaves chicken stir fry is ready
to serve.
