Idichakka thoran(Tender jack fruit stir fry)

Ingredients:
Tender
jack fruit (idichakka)- 1(small)
Coconut
oil-3tbsp
Mustard-1/4
tsp.
Parboiled
rice-1tsp
Split black
gram-1/4 tsp
Dry red
chillies-2nos
Turmeric
powder-1/4tsp
Chilly powder-1/2tsp
Chopped
onion-1/2 cup
Grated
coconut-1 cup
Curry
leaves-1 string
Green chillies-
2(slit)
Salt to
taste
Preparation:
Cut the
jack fruit into small chunks. Chop off the thorny skin and stem. Cook these
chunks in 2 cups of water, turmeric powder in a pressure cooker for 1-2 whistles.
Remove from fire and drain the water. Shred the cooked jack fruit by using a
mixer. In a bowl add shredded jack fruit, turmeric powder, green chillies,salt
and red chilly powder. Mix well. Heat oil in a pan add mustard and when it
splutters add rice, split black gram, dry chillies, chopped onion, curry leaves
and sauté for 2 minutes. Add the jack fruit mixture, cumin powder and grated
coconut and sauté well. Jack fruit thoran is ready.
