Falooda

Ingredients : 1 cup of chilled milk 1 tbsp. Sabja seeds 1 tbsp. of Sugar Vermicelli cooked with milk and 3 tbsp. of sugar 2 scoops of vanilla ice cream 2 tbsp. fruits 2 tbsp. nuts 2 tbsp. of rose syrup Method : Soak the sabja seeds about an hour. Pour half of the chilled milk, rose syrup, cooked vermicelli, sabja seeds and half of the fruits and nuts. Repeat the process with the other half. Top it with the ice cream and nuts. Your Falooda is ready to be served. 

Mango ice cream

Ingredients : Mango Pulp -3 cups Milk-500 ml Sugar-1 cup Cornflour-2tbsp Fresh cream-1/2 cup Method : Boil the milk and reduce it into three forth of its volume. Mix cornflour with a quarter cup of milk and add this to the boiling milk. Remove it from the fire and allow it to cool. Beat fresh cream, mango pulp and powdered sugar in a bowl and add it to the milk. Whisk it well. Keep it in the freezer for an hour and beat the mixture again. Repeat beating the mixture for about two times. Pour the mixture into your mould and freeze it. Your mango ice cream is ready to be served.

Dalgona Coffee

Ingredients Instant coffee Milk Sugar Water Method In a bowl take the instant coffee, sugar and hot water into a bowl in 1:1:1 ratio depending on the number of servings. Whisk until it gets thick, creamy and lighter in colour. Add ice in a glass and pour the milk about ¾ its volume. Top it with the creamy coffee mixture. Your Dalgona Coffee is ready to be served.

Bread Pudding

Ingredients 6 slices of Bread 4 tbsp. of sugar for caramelizing ½ a cup of sugar ½ a cup milk ½ tsp. vanilla essence 4 tbsp. custard powder Method: In a pan add the sugar for caramelizing and pour it into your pudding mould. Spread it evenly. Remove the edges of the bread. Cut the bread into small pieces and grind it well. Mix the custard into half the amount of your milk and mix it. Keep it aside. In a boil the rest of the milk and add sugar. Mix and cook it in low flame. Add the bread crumbs and vanilla essence. Make it of semi-thick consistency. Pour the mixture into the mould and cover it with aluminium foil. Pour hot water into another pan and place a stand in it. Keep the mould over the stand and cover it. Steam it for 20-30 minutes. Cool it at room temperature and refrigerate for about 2 hours. Invert it into a plate. Bread pudding is now ready to be served.

Tender Coconut Shake (Elaneer Sshake/Karikku Shake)

 Ingredients:  Tender coconut flesh – 1 cup  Tender coconut water-1/2 cup  Chilled milk-1 cup  Milk powder-2tsp  Powdered sugar-3-4 tbsp.  Vanilla essence-1/2 tsp. PREPARATION Blend all the ingredients together and serve it chilled. Enjoy. 

Pineapple Pudding

Pineapple Pudding Preparation time: 30minutes              Dessert Cook time: 30 minutes INGREDIENT 2 cups pineapple chopped 4 tbsp condensed milk 1ltr milk 8 tbsp. sugar 10 gm china grass 1½ cups water ¼ tsp pineapple essence 1 tbs custard powder For garnishing 2 tbsp crushed caramelised cashew nuts  PREPARATION Cook the chopped pineapple with 2 tbsp sugar on low flame. Remove from fire.  Soak china grass in 1 ½ cups water and keep a side.  In a pan boil milk then add condensed milk, remaining sugar, custard powder (mixed with a little cold milk), pineapple essence, pineapple syrup(juice you get while cooking chopped pineapple) and mix well. Shahi Tukda

Shahi Tukda Cook time: 15 min + chilling time VEGETARIAN Cuisine: Indian ________________________________________ Shahi Tukda INGREDIENTS: 5 slices bread 1tbs ghee for toasting For sugar syrup: 1 cup water ½ cup sugar For Rabadi: 500ml double cream milk 3tbs sugar 3tbsp condense milk A few strands of saffron For garnishing ½cup mixed nuts(pistachio and almond) ________________________________________ PREPARATION For the Rabadi (thick milk): 1. Boil milk and stir well. Now add sugar and saffron strands. 2. Simmer for few minutes till the Rabadi is thick. 3. Add condensed milk. Mix well. Remove from fire. Procedure: 4. Phirni Cook time: 15 min + chilling time            VEGETARIAN Cuisine : Indian INGREDIENTS: 250 ml milk 2 tsp. rice flour 2 Tbsp. almonds - chopped 2 Tbsp. pistachios – chopped 2 tbsp. cashew nuts 1 ½ Tbsp. sugar ¼ rose essence PREPARATION 1.       Heat the milk in a pan till it comes to a boil, then simmer. Add the rice flour while stirring continuously to prevent lumps. 2.       Add sugar and continue stirring till it begins to thicken. Mix in the chopped dry fruits. Add the rose essence. 3.       Pour the mixture into serving bowls. Garnish with chopped dry fruits. 4.       Refrigerate for 2-3 hours. Serve chilled. Along with the dry fruits, I have also poured some caramelized sugar over it so as to garnish the Phirni.
