Bhel Puri

Bhel puri

When I ate Bhel Puri for the first time from a store in my area, I liked it a lot. It was crispy, tangy, sweet and spicy. It is an Indian Savory Snack common in Mumbai and Gujarat. I tried it out and realized that its a very easy recipe.



INGREDIENTS:
½ cup Sev (recipe below)
10 Papadi (recipe below)
¼ cup chopped onions
½ cup boiled potatoes, chopped
1 tsp. fresh garlic chutney (recipe below)
2 cups puffed rice
4 tbsp. dates green chutney (recipe below)
2 tbsp. green chutney (recipe below)
¼ tbsp. lemon juice
1 tbsp. coriander
½ tbsp. chopped raw mango
1/2 cup roasted peanuts (salted)
Salt to taste

For garlic chutney:
1 tbsp garlic paste
1 tbsp. red chilly powder
½tsp lemon juice
salt to taste

Method:
Grind the above ingredients and make paste.

For dates green chutney:
1/2 cup dates (remove seeds)
1 tbsp tamarind pulp
2 tbsp. grated Jaggery/ Panela
1 tbsp. chilli powder
A pinch of asafoetida

In a pan add 2 tbsp. water then add tamarind pulp mix well. Then add Jaggery/ Panela, chilly powder, and asafoetida. Stir well. Then add 2 tbsp. water and salt. Cook on slow fire for 10 minute

Green chutney:
1 cup mint leaves
½ cup coriander leaves
1tbs onion chopped
1tbs lemon juice
2 green chillies
salt to taste

Method:
Grind all the above ingredients and make paste.

Papadi:
1 cup (all purpose flour)
1tsp carom seeds
1tsp oil
Salt to taste
Oil for deep frying

Method:
Make a smooth dough by using the above ingredients . Flatten them into small circles. Then deep fry them in some oil and keep them aside.

SEV:
1 cup besan (gram flour)
2tbs hot oil
¼ tsp asafoetida
¼tsp turmeric
salt to taste
3tbs water

Method:
By using above ingredients make a dough .Fill it in a vermicelli/noodle maker . Press gently and deep fry on moderate heat. Remove them and keep them aside.

PREPARATION
1.      Combine all the ingredients in a large bowl and toss gently till all the ingredients are well mixed.
2.      For garnishing crush 4 papadis, add the chopped raw mangoes, add sev and chopped coriander leaves.

3.    Divide into 4 equal portions and garnish each portion with the garnish mixture. Bhel puri is ready to serve.
