Plain Hoppers
(Vellayappam)
Preparation time: overnight (for batter)                        Cuisine: Indian
Ingredients:
2 cups raw rice
1 cup grated coconut
Boiled rice 1 cup
¼ tsp. yeast
4 cups water
1 tsp. sugar
Salt to taste
Preparation:
1.     Soak the rice for at least 3 hrs. Then grind the soaked rice with grated coconut and cooked boiled rice. 
2.     Keep it for 1 hr. then add yeast (dissolved in water).
3.     Keep this batter overnight for fermentation. 
4.     The following morning add sugar and salt to the fermented batter. 
5.     Keep a side for some time. 
6.     Pour 6 tbsp. of batter into the heated pan. Rotate with ladle. Cover the pan with a lid. When cooked take the Vellayappam out with a spatula. Ready to serve.
