Stuffed Sardines

Stuffed Sardines
Preparation time: 15 min.                    Cuisine: Indian
Cook time: Less than 10 min               Non  Vegetarian




Ingredients:
4 Medium/Large fresh sardines
2 cups of bread crumbs
1 cup mashed potato
1 garlic clove [finely chopped]
½ tsp white pepper
½ cup corn flour [batter]
Salt to taste
Coconut oil/olive oil
Curry leaves for garnishing


Method:
1.      Remove the scales and innards of each sardine.
2.      Put out the backbones with scissors and rub it with a little salt and pepper.
3.      Leave ½ inch backbone at the top and bottom of the fish or else the flesh will get separated.  Mix the bread crumbs, chopped garlic, mashed potatoes, salt and white pepper in a bowl. Place a sardine in the palm of your hand, skin side down.
4.      Stuff the bread crumbs mixture.
5.      Place another sardine on the top and press it lightly to stuffing.
6.      Dip the stuffed sardine in the corn flour batter and fry it until golden brown.
7.      Repeat the process with the second pair of sardines.

8.      Garnish it with fried curry leaves.
