Shahi Tukda

INGREDIENTS:
5 slices bread
1tbs ghee for toasting

For sugar syrup:
1 cup water
½ cup sugar
For Rabadi:
500ml double cream milk
3tbs sugar
3tbsp condense milk
A few strands of saffron

For garnishing
½cup mixed nuts(pistachio and almond)

PREPARATION
For the Rabadi (thick milk):
1. Boil milk and stir well. Now add sugar and saffron strands.
2. Simmer for few minutes till the Rabadi is thick.
3. Add condensed milk. Mix well. Remove from fire.

Procedure:
4. Cut the bread slices into quarters.
5. In a skillet add ghee and toast the slices. Turn them when golden brown. Remove from heat and arrange the toasted bread slices in a deep pan.
6. Prepare the sugar syrup, and then add rose essence. Remove from fire.
7. Pour the sugar syrup over the toast. Pour the Rabadi over the soaked bread slices. Garnish with toasted nuts.
8. Served when chilled/warm.
