Jackfruit cake
INGREDIENTS
2 cups all-purpose flour
3/4 cup granulated sugar
1 cup butter
4 eggs
Vanilla essence (optional)
1 tsp. baking powder
1/2 tsp. baking soda
Cashew nuts (optional)
For jackfruit paste:
Jack fruit (grounded)- 2 1/2 cups
Jaggery syrup -1 cup
Cardamom powder-1/4 tsp
Cardamom powder-1/4 tsp
METHOD:
In a deep bottom pan add grounded jack fruit. Stir it well for 3 minutes. Then add the jaggery syrup and stir well until it becomes thick consistency. Allow it to cool.
PREPARATION
1. Sift together flour, baking powder and baking soda and keep it aside.
2. Whisk butter and fine sugar till smooth. Then add eggs one by one. Beating well after each addition.
3. Add flour mixture little by little. Then add cooked jackfruit paste and vanilla essence. Combine it well.
4. Preheat oven at 180 OC and then bake it for 35 min.
5. Remove from oven and cool to room temperature
