Tender Coconut Shake (Elaneer Sshake/Karikku Shake)

 Ingredients:  Tender coconut flesh – 1 cup  Tender coconut water-1/2 cup  Chilled milk-1 cup  Milk powder-2tsp  Powdered sugar-3-4 tbsp.  Vanilla essence-1/2 tsp. PREPARATION Blend all the ingredients together and serve it chilled. Enjoy.

INGREDIENTS 2 cups all-purpose flour 3/4 cup granulated sugar 1 cup butter 4 eggs Vanilla essence (optional) 1 tsp. baking powder 1/2 tsp. baking soda Cashew nuts (optional) For jackfruit paste: Jack fruit (grounded)- 2 1/2 cups Jaggery syrup -1 cup Cardamom powder-1/4 tsp          METHOD: In a deep bottom pan add grounded jack fruit. Stir it well for 3 minutes. Then add the jaggery syrup and stir well until it becomes thick consistency. Allow it to cool. INGREDIENTS 2 cups all-purpose flour 1 cup granulated sugar 1 cup butter 3 eggs Vanilla essence (optional) 1 tsp. baking powder 2 tbsp. fine sugar for dusting PREPARATION 1. Sift together flour, baking powder and keep it aside. 2. Whisk butter, fined sugar till smooth. Then add eggs          beating well after each addition. 3. Add flour mixture little by little.  Then add vanilla              essence and combine. 4. Spoon the batter into the prepared moulds, dividing          evenly. 5. Preheat oven at 180 OC and then bake it for 15 min. 6. Remove from oven and cool to room temperature 7. Dusting fine sugar on top of the cake.
